Savory Polenta (episode #17)


  • 2 cups chicken stock
  • 1/2 cup of cornmeal
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 stick butter
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese
  • teaspoon olive oil to finish

Savory Polenta Directions:

  • add chicken stock to a saucepan and bring to a boil
  • whisk in cornmeal slowly
  • add butter and whisk constantly
  • then add parmesan and continue to whisk
  • cover and let sit for 10 to 20 minutes
  • serve hot as a side
  • Enjoy!
    You can serve Polenta as a tasty side or use it as a bed to place chicken or other dishes on as well
