Ingredients:
- 2 cups chicken stock
- 1/2 cup of cornmeal
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 stick butter
- 1/2 cup freshly grated Parmigiano-Reggiano cheese
- teaspoon olive oil to finish
Savory Polenta Directions:
- add chicken stock to a saucepan and bring to a boil
- whisk in cornmeal slowly
- add butter and whisk constantly
- then add parmesan and continue to whisk
- cover and let sit for 10 to 20 minutes
- serve hot as a side
- Enjoy!
You can serve Polenta as a tasty side or use it as a bed to place chicken or other dishes on as well
