Chicken Vesuvio

  • 4 chicken breasts
  • 4 potatoes
  • 1/2 cup all purpose flour
  • 1 1/2 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1/4 teaspoon pepper
  • a pinch of sage
  • 1/2 teaspoon salt
  • 6 cloves garlic
  • 1 cup dry white wine (something you would be happy to drink)
  • 1 cup chicken broth
  • a stick butter
  • shredded parmesan cheese
  • olive oil
  • parsley

Chicken Vesuvio Directions:

  • season flour with oregano, thyme, sage pepper and salt
  • dredge your chicken in the flour mixture and brown in olive oil (remove to paper towel)
  • cut potatos into bite size pieces
  • add potatos to the chicken fat and olive oil mixture and season with salt and brown(remove to paper towel)
  • place chicken and potatos back into pan
  • pour in wine
  • then chicken stock
  • add garlic, butter and parsley
  • top with parmesan
  • place covered in a 370° oven for appx 20 min you will know when this is done by using a fork and lightly pushing it thru your potato if it goes thru with little to no resistance you are done.
