Chicken Vesuvio
Ingredients:
Chicken Vesuvio Directions:
- season flour with oregano, thyme, sage pepper and salt
- dredge your chicken in the flour mixture and brown in olive oil (remove to paper towel)
- cut potatos into bite size pieces
- add potatos to the chicken fat and olive oil mixture and season with salt and brown(remove to paper towel)
- place chicken and potatos back into pan
- pour in wine
- then chicken stock
- add garlic, butter and parsley
- top with parmesan
- place covered in a 370° oven for appx 20 min you will know when this is done by using a fork and lightly pushing it thru your potato if it goes thru with little to no resistance you are done.
