Chicken Rollatini

Chicken Rollatini Directions:
- butterfly the chicken breasts and pound thin with a mallet
- saute spinach in olive oil, garlic, salt and pepper
- add salt and pepper to each chicken breast
- place a piece of prosciutto, povolone, spinach, mozzarella and parmesan
- tightly roll your chicken as seen in the video
- roll each one in flour, then egg and finally bread crumb
- place each in a hot pan with olive oil seam side down 2 to 2 1/2 minutes per side
- place pan with chicken in the oven at 450° for 10 to 12 minutes
- set chicken aside to cool
- slice on an angle
- serve on a bed of polenta click here for recipe

(Optional: top with mushroom reduction sauce)
- place mushrooms and butter in the same pan with the chicken fat and olive oil
- add white wine, balsamic vinegar and chicken stock
- reduce till thick
